Yeasts is made up of unicellular microorganisms that can multiply at extremely rapid rates. They are classified as members of the kingdom Fungi. They are present in nature on the surface of plants, flowers, and fruits, in the soil or even in the air.
We obtain yeasts from selected strains of the microscopic fungus, Saccharomyces cerevisiae, which feeds on sugar to reproduce.
Yeast is used to make wine, beer, and many types of breads. For bread dough to rise or beer to ferment, active yeasts are needed, which have the ability to metabolize sugars or convert sugars into alcohol through a process called fermentation.
In the case of nutritional yeast, it is inactive.
To produce Nutritional Yeast, Saccharomyces cerevisiae cells are grown on a sugar-rich medium, like molasses. Then, these cells are deactivated or killed as they go through a heating process. They are then washed, dried, broken up and packaged for distribution. It is sold as flakes, granules, or powder.
Affectionally called Nooch, Nutritional Yeast can be included in most diets. It has a low calorie and sodium content, and it is fat free, sugar free, gluten free, and vegan.
Nutritional Yeast is nutrient dense, an excellent source of protein, fiber, and amino acids, it is also high in vitamin B12, making it a popular ingredient for vegans, as it is difficult to obtain this vitamin when not consuming animal products. It is a great complement for people who follow a diet without meat, eggs, or dairy.
You don’t have to be vegan to appreciate the addictive taste of Nutritional Yeast. With its powerful Unami flavor, it is a secret weapon in today’s healthy cooking, mostly used to add a cheesy flavor to plant-based recipes.
